Carrot Soup

Ingredients:

  • 1 tablespoon coconut oil
  • ½ cup onions, finely chopped
  • 2 cups carrot, sliced
  • 1 teaspoon Ginger Paste MF
  • 2 cups water
  • 2 tablespoons Alfredo Pasta Sauce MF
  • 1 teaspoon salt
  • ½ cup white beans, cooked
  • Sundried tomatoes, sliced

Preparation:

  1. Melt the coconut oil in a large saucepan over a medium heat. Add the onions, carrots and Ginger Paste and sauté gently until soft.
  2. Pour in the water and Alfredo Pasta Sauce. Give it a stir and bring to the boil.
  3. Simmer until the carrots are soft.
  4. Remove from the heat and liquidize the soup in the saucepan using a hand-held stick blender.
  5. Season to taste with salt.
  6. Stir in the white beans and continue to cook for a further few minutes, allowing the flavors to blend.
  7. Serve in bowls, garnished with sundried tomato slices.
