Ingredients:
- 1 tablespoon coconut oil
- ½ cup onions, finely chopped
- 2 cups carrot, sliced
- 1 teaspoon Ginger Paste MF
- 2 cups water
- 2 tablespoons Alfredo Pasta Sauce MF
- 1 teaspoon salt
- ½ cup white beans, cooked
- Sundried tomatoes, sliced
Preparation:
- Melt the coconut oil in a large saucepan over a medium heat. Add the onions, carrots and Ginger Paste and sauté gently until soft.
- Pour in the water and Alfredo Pasta Sauce. Give it a stir and bring to the boil.
- Simmer until the carrots are soft.
- Remove from the heat and liquidize the soup in the saucepan using a hand-held stick blender.
- Season to taste with salt.
- Stir in the white beans and continue to cook for a further few minutes, allowing the flavors to blend.
- Serve in bowls, garnished with sundried tomato slices.
